If you’re a fan of quick and nourishing, on-the-go snacks then energy balls are the perfect choice! There is an endless list of recipes out there but I particularly favour ones that give me the boost needed for nursing my little bub. Enter these Cashew Cacao Bliss Balls…
Breastfeeding can definitely encourage one heck of an appetite and I found myself, numerous times, nibbling constantly like my tummy was a bottomless pit! So, I selected these ingredients based on wanting to feel full and nourished keeping the portions small so get rolling peeps!
Ingredients (makes approx. 24)
- 1.5 cups cashews
- 1/4 cup almond meal
- 1 tbsp raw cacao
- 2 tsp chia seeds
- 2 tbsp maple syrup
- 1 tbsp vegetable oil
- 1 tbsp organic peanut butter
- 1 cup of pitted dates
Methods:
- In a food processor, add the dates, cashews, almond meal, cacao, syrup and oil and pulse until well combined.
- Add the chia seeds and nut butter to the mix and pulse again to combine well. I you feel that the mixture is slightly dry, add a tablespoon of water.
- Once the mixture is well-combined, roll into small balls then place into an airtight container and store in the fridge overnight for consumption the next day. You can always store them in the freezer for a later time.
