Cashew Cacao Bliss Balls

If you’re a fan of quick and nourishing, on-the-go snacks then energy balls are the perfect choice! There is an endless list of recipes out there but I particularly favour ones that give me the boost needed for nursing my little bub. Enter these Cashew Cacao Bliss Balls…

Breastfeeding can definitely encourage one heck of an appetite and I found myself, numerous times, nibbling constantly like my tummy was a bottomless pit! So, I selected these ingredients based on wanting to feel full and nourished keeping the portions small so get rolling peeps!

Ingredients (makes approx. 24)

  • 1.5 cups cashews
  • 1/4 cup almond meal
  • 1 tbsp raw cacao
  • 2 tsp chia seeds
  • 2 tbsp maple syrup
  • 1 tbsp vegetable oil
  • 1 tbsp organic peanut butter
  • 1 cup of pitted dates

Methods:

  1. In a food processor, add the dates, cashews, almond meal, cacao, syrup and oil and pulse until well combined.
  2. Add the chia seeds and nut butter to the mix and pulse again to combine well. I you feel that the mixture is slightly dry, add a tablespoon of water.
  3. Once the mixture is well-combined, roll into small balls then place into an airtight container and store in the fridge overnight for consumption the next day. You can always store them in the freezer for a later time.
