Rustic Apple, Cinnamon & PB Brekkie Bars

Back in action again, well, perhaps only temporarily as little bub is due this month so we’ve got lots of catching up to do! Time to start sharing some overdue recipes starting with this one! 

With autumn currently in full-force, ingredients such as apples, pears and pumpkin have been filling my social media feed including my kitchen. One particular recipe that caught my eye was The Lean Green Bean’s Apple Cinnamon Breakfast bars because you can never go wrong with apple and cinnamon! I’ve slightly revamped the recipe so hope you enjoy these Rustic Apple, Cinnamon and PB Brekkie Bars! 

Ingredients (makes about 5-6 bars depending on how you divide them up)

  • 1/2 cup of organic crunchy peanut butter (no added sugar nor palm oil)
  • 3/4 cup of soy milk
  • 1 tsp of vanilla extract
  • 1 egg
  • 2 tsp of ground cinnamon
  • 2 tbsp of vegetable oil
  • 1.5 cup of oats
  • 1 cup of buckwheat flour
  • 1 tsp of baking soda
  • 1/2 cup of Stevia or other sweetener of choice
  • 1.5 cups of chopped apples
  1. Preheat oven to 175/180 C (fan forced) and line a 9×9 baking pan with baking paper. 
  2. In a bowl, combine the wet ingredients: peanut butter, milk, vanilla extract, egg and oil. Mix well until evenly combined
  3. In a separate bowl, add the dry ingredients including the apples. Make a crest in the middle, then add the wet ingredients. Stir the mixture until all your ingredients have been well combined. 
  4. Spoon the mixture into the pan pressing firmly and ensuring no gaps occur.
  5. Bake for about 15-20minutes or until golden brown. 
  6. Once cooled, cut into 5-6 bars and serve as a snack with a cuppa or store in an airtight container for devouring at a later time.
