Nutrition A-Z’s newest dietitian is sharing her first, simple and summery salsa recipe. This refreshing summer salsa not only tastes great, it is also rich in heart-healthy monounsaturated fats.
Simple and easy to make as a perfect dip with wholegrain crackers or as a topping on some grilled fish!
Ingredients (Makes 4 servings):
- 2 ripe avocados
- 500 g cherry tomatoes
- 1 small onion, finely chopped
- 1 clove garlic, crushed
- 1 Lemon
- 1 Tbsp extra virgin olive oil
- Salt and pepper to taste
Method:
- Cut avocados in half and remove the pits. Keeping the flesh in the skin, cut 2 x 2 cm squares into the flesh using a butter knife. Scoop out with a tablespoon.
- Rinse the tomatoes and cut into quarters.
- Combine avocado, tomatoes, onion and garlic with the lemon juice and lemon zest.
- Sprinkle with the olive oil.
- Season with salt and pepper
This is great served on top of grilled fish or simply as part of a balanced meal. For a balanced vegan meal, simply add some cooked quinoa or chickpeas!
