Summery Avocado salsa

Nutrition A-Z’s newest dietitian is sharing her first, simple and summery salsa recipe. This refreshing summer salsa not only tastes great, it is also rich in heart-healthy monounsaturated fats.

Simple and easy to make as a perfect dip with wholegrain crackers or as a topping on some grilled fish!

Ingredients (Makes 4 servings):

  • 2 ripe avocados
  • 500 g cherry tomatoes
  • 1 small onion, finely chopped
  • 1 clove garlic, crushed
  • 1 Lemon
  • 1 Tbsp extra virgin olive oil
  • Salt and pepper to taste

Method:

  1. Cut avocados in half and remove the pits. Keeping the flesh in the skin, cut 2 x 2 cm squares into the flesh using a butter knife. Scoop out with a tablespoon.
  2. Rinse the tomatoes and cut into quarters.
  3. Combine avocado, tomatoes, onion and garlic with the lemon juice and lemon zest.
  4. Sprinkle with the olive oil.
  5. Season with salt and pepper

This is great served on top of grilled fish or simply as part of a balanced meal. For a balanced vegan meal, simply add some cooked quinoa or chickpeas!
