V-Day Banana & Oat Choco Muffins

And so we approach the big day to celebrate everything love! I’m not one to succumb to the V-day hype as love should be celebrated everyday. However, here’s me celebrating by sharing this recipe for you to spoil your partner this Sunday with a brekkie fest that includes these delish Muffins?! 

Oats and bananas are normally a heavenly combo in a energy-packed breakfast. So, why not combine these two with a hint of coconut, chocolate and chia seeds?

Ingredients (Makes 6 medium muffins)

For the Dry:

  • 1 cup of almond meal
  • 1/2 cup of gluten free flour
  • 1/2 cup of oats
  • 1 tablespoon of grated coconut
  • 1 tablespoon of chia seeds
  • 2 teaspoons of GF baking powder
  • 2-3 tablespoons of Stevia
  • 1 tablespoon of organic 100% cacao

For the Wet: 

  • 2 ripe bananas, mashed
  • 60ml  of vegetable oil
  • 2 eggs
  • 1 cup of lactose free milk/rice milk/almond milk
  • 2 teaspoons of vanilla essence
  1. Preheat oven to 160 degrees C (fan forced).
  2. In a medium bowl, combine all dry ingredients (almond meal, flour, cacao, coconut, baking powder, seeds and stevia). In a separate, smaller bowl,  combine all wet ingredients, gently whisking and then add the mix to your dry ingredients. 
  3. Mix all the ingredients gently until a smooth mixture is formed. 
  4. Spoon the batter into a non-stick muffin tin (I used a “6” medium muffin tin)
  5. Place in oven and bake for 30minutes (or when a toothpick inserted in the middle comes out clean). 
  6. Once muffins are baked, let them cool on a rack for 10minutes before popping them out of the tin. Enjoy!IMG_0262
