Recipe Recap: It's All About the Chia Puddings!

I’ve started experimenting with chia puddings a few months back given the stash of chia seeds lying in the pantry and found them to be an excellent grab ‘n go brekkie option! Looking back at some inspiring recipes, here are my top chia pudding picks of the week! Slide1

Overnight Chocolate Chia Oat Pudding by To Her Core

  • 1 small, ripe banana
  • 2 Tbsp raw cacao powder
  • 2 Tbsp sweetener (raw honey, coconut sugar, maple syrup), optional
  • 2 Tbsp water
  • 1/2 cup rolled oats
  • 3 Tbsp chia seeds
  • 1.5 cups full-fat coconut milk (optional: skimmed, almond, rice or soy milks would work too!)
  1. In a bowl, mash the banana with the cacao, sweetener if using, and water until it forms a smooth paste.
  2. Stir in the oats and chia seeds, and then the milk, stirring continuously.
  3. Place in the fridge overnight either in the bowl or in individual jars.
  4. To serve it warm, add to a saucepan in the morning and heat over low to medium heat around 5 minutes. You may need to add some extra liquid at this point to thin a little if the porridge is to thick.
  5. Serve topped with berries, coconut cream/yoghurt and chopped nuts.

Blackberry Banana Chia Pudding by The Gantzery 

Ingredients

  • 1/2 banana, sliced
  • 1/2 cup fresh blackberries (or thawed frozen berries)static1.squarespace
  • 3 Tbsp chia seeds
  • 1/4 tsp cinnamon
  • 1/4 tsp ground vanilla (vanilla extract should work, too)
  • A pinch of sea salt
  • 1/2 cup full-fat coconut milk & 1/2 cup water* (optional: skimmed, low fat, almond, rice or soy milks would work too!)

*Canned coconut milk is pretty thick, so we find it works best diluted with water. If you’re using another liquid – juice, almond milk, water or homemade coconut milk – no need to dilute, just use 1 cup.

Toppings

  • Blueberries
  • Apricots, or any seasonal fruit
  • Cacao nibs
  • Nut butter
  • Shredded coconut
  1. In a jar or bowl, mash the banana and blackberries with a fork.
  2. Add in the chia seeds, cinnamon, vanilla, and sea salt, and mix well.
  3. Pour in the milk and water, and mix well.
  4. Let sit for at least one hour. Ideally, let it sit overnight.
  5. Top with your favourite stuff. We typically use seasonal fruits (right now we’re into berries and apricots) and cacao nibs, which add a nice crunch.

Fig and Blueberry Chia Pudding by A Taste of Koko

  • 2 cups cashew milk
  • ½ cup chia seeds
  • ½ tsp vanilla extract
  • 2 tbsp honey or maple syrup
  • ½ cup blueberries, washed and dried
  • 4 small fresh figs, sliced
  1. Mix together cashew milk, chia seeds, vanilla extract, and honey in a bowl. Cover and refrigerate overnight.
  2. Top with blueberries and sliced figs in the morning.
  3. Enjoy!
